The gap between crude honey in a bucket and clean honey that meets an international standard is where nearly all the lost value in African beekeeping sits, and closing it costs discipline rather than capital. This module covers getting honey out of comb, straining and settling it clear, the Codex composition limits a buyer will test you against including the tropical HMF allowance, why crystallisation is normal, how to pack and label, and how to grade and price your crop. Every price is local and every legal rule is national, so this module teaches you what to measure and who to ask.

Extraction Methods

Getting honey out of comb is where your crop either keeps its value or loses it. There are three methods, and which is right for you depends entirely on your hive type and on what equipment you can actually reach.

Method one: cut comb, sold as comb honey. You cut a piece of clean capped comb, put it in a clean food-grade container, and sell it as it is. No extractor. No strainer. No settling tank. No heating. Nothing at all beyond a clean knife and a clean box.

This method suits any hive type and it often earns the highest price per kilogram of any form of honey, because the customer can see it has not been tampered with, diluted or heated. It is badly underused in Africa. If you have one thing to try after this lesson, try selling a few boxes of cut comb at your best local price and see what happens. The rules are simple: only fully capped comb, only clean white or light comb without brood or pollen, cut with a clean knife, packed the same day.

Method two: crush and strain. The comb is cut off the top bar, crushed, and the honey allowed to run out through a strainer. The wax is retained and rendered later. This is the correct default for a top-bar beekeeper and for anyone with fixed-comb hives.

Its stated disadvantage is that it destroys the comb. Understand this properly, because it is the central economic point of the whole module. Destroying the comb is exactly how you get the roughly 10 to 1 honey to wax return that makes top-bar economics work. A frame hive returns around 75 to 1 because the comb goes back on the hive intact. So the comb destruction is not a defect of crush and strain. It is the second crop.

But it has a real cost too, and you should know it. About 8 kg of honey are consumed by the bees to produce 1 kg of beeswax. Every comb you crush, the bees must rebuild, and they pay for it in honey they would otherwise have stored. So crush the comb you must and no more, take honey comb rather than brood comb, and never crush comb the colony still needs.

Method three: centrifugal extraction. This works only with frame hives. You uncap the frame with a knife or a scratcher, put it in an extractor, spin it, and the honey flies out against the wall of the drum and runs to the bottom. The comb survives and goes back to the bees to be refilled.

Centrifugal extraction gives the highest honey yield, because the bees do not have to rebuild comb. It gives you almost no wax. And it requires an extractor.

What does an extractor cost? The only sourced equipment prices available for this course are from the United States in the 2020s: an extractor at 254 dollars, an uncapping knife at 75, a scratcher at 7, a strainer at 34 and a bottling bucket at 25. Those are not African prices and they are not a guide to your local cost. They are printed here only to show you the shape of the list and the relative sizes: the extractor is by far the biggest line, and the other four items together cost less than half of it.

That leads to the most important decision in this lesson, and it is a decision to make before you buy hives, not after.

The extractor is the dividing line. A frame hive system without an extractor gives you the worst of both worlds: you paid about three times as much for the hive, and you still end up crushing comb at harvest. You get the frame hive's cost and the top-bar hive's comb destruction, with none of the frame hive's yield advantage.

So do not put yourself into frame hives unless an extractor is genuinely accessible. Genuinely accessible means one of three things: you own one, your cooperative owns one, or there is a service provider within reach who will extract for you at a price you have actually asked about. A promise that someone will buy one next year is not access.

There is a fourth option worth knowing about. A cooperative-owned extractor is how most small frame-hive beekeepers in the world get their honey out, and it is one of the concrete reasons group membership was measured as adding to production in the Baringo study. If your local group has an extractor, that changes your hive calculation completely.

Whichever method you use, three rules apply to all of them. Work in the cleanest, driest room you have. Cover everything at all times, because honey absorbs moisture from humid air. And process promptly, because harvested comb standing in a shed is where the worst small hive beetle slime-outs happen.

Straining, Settling and Clarity

Refined honey requires straining to remove all particles of beeswax and other material. That is the instruction. But what does clean actually mean, and how do you know when you have got there?

Here is the honest position. No sourced mesh size, settling time or settling-tank specification was available for this course. That is a real gap, and this module will not invent numbers to fill it. What exists instead is something better: a measurable target that the whole process is aimed at.

That target is the Codex limit on water-insoluble solids: not more than 0.1 grams per 100 grams for standard honey, and not more than 0.5 grams per 100 grams for pressed honey. Water-insoluble solids means everything in your honey that is not honey. Wax, bee parts, pollen clumps, grit, ash, dust, bits of comb. That is the specification straining exists to meet, and it is the honest way to teach straining without a mesh number.

So the standard is not a mesh size, it is an outcome. And it is the exact failure that produces crude honey. A beekeeper who cuts comb, brood, pollen and debris into a bucket and sells it as it is fails this parameter by a wide margin, and it is entirely fixable by filtration.

Now the process, built from principles that follow from the sourced material.

Strain warm, not hot. Warm honey flows through cloth. Hot honey loses diastase and gains HMF, and both of those are measured by your buyer. Warm here means the honey is at the temperature of a warm room or warmed gently in an indirect way, never over a flame and never in a pot on the fire.

Use the finest cloth that honey will actually pass through. Coarse cloth first if the honey is full of wax, then finer. Two stages beats one. Clean, food-grade cloth only, washed and dried, never a cloth that has held anything else.

Settle before you bottle. This is the step most beekeepers skip and it costs them the most in appearance. After straining, honey still contains very fine wax particles and a great many air bubbles from the crushing and pouring. Both rise. Left standing in a covered container, the honey forms a layer of pale scum and foam at the top and clears from the bottom up.

How long? Settling time is temperature and viscosity dependent and no sourced figure was available. So determine it locally by observation. Fill a clear container, leave it covered, and watch. Write down how many hours or days it took for your honey, in your room, at your temperature, to clear. That figure is now yours and it will not change much from batch to batch.

Then draw the honey off from the bottom of the settling container, not the top, and leave the scum behind. A tap fitted low on a food-grade drum is the single cheapest upgrade to a small honey house. Skim the scum off and keep it. It is honey and wax and it is perfectly good for home use or for feeding back.

Now containers, where careless choices ruin good honey.

Store in food-grade, airtight, opaque containers. Airtight, because honey is hygroscopic and will absorb moisture from humid air until it ferments. Opaque and cool, because heat and light drive HMF formation and darken the colour.

And this rule is absolute: never store honey in galvanised, uncoated iron or copper containers. Honey is acidic. Free acidity of up to 50 milliequivalents per 1,000 grams is normal and permitted under Codex. That acid will dissolve metal into your honey. Stainless steel, food-grade plastic or glass only.

While we are on containers, apply the harvest rule here too. Never use a container that has held fuel, pesticide, paint or soap. This is the single commonest honey contamination event in smallholder systems, and it is not recoverable. A drum that held diesel will taint every batch you ever put in it, no matter how you wash it.

Store cool and dark. HMF rises with storage temperature and with time. The exact rate was not available for this course, so the practical rule is simply: the coolest, darkest, driest place you have, sealed.

One last piece of discipline. Strain and settle in the driest room available, not the coolest damp one. In a humid climate a cool damp store will put moisture back into honey you worked hard to keep dry. Dry beats cool every time.

The Codex Honey Standard

Codex Alimentarius Standard for Honey, CXS 12-1981, is the international standard that defines what honey is and what it must contain. It is the most trustworthy set of numbers in this whole course, and it is the language every formal buyer speaks. Learn it.

Start with the definition. Honey is the natural sweet substance produced by honey bees from the nectar of plants or from secretions of living parts of plants or excretions of plant sucking insects. Codex divides it into blossom or nectar honey, which comes from plant nectars, and honeydew honey, which comes mainly from the excretions of plant-sucking insects.

Notice what the definition excludes. Nothing may be added. A honey with sugar syrup in it is not honey with a fault; it is not honey.

Now section 3, the essential composition and quality factors.

  • Moisture: not more than 20 percent for general honeys. Heather honey, Calluna, is allowed not more than 23 percent.
  • Fructose plus glucose: not less than 60 grams per 100 grams for general honeys. For honeydew honey and blends of honeydew with blossom honey, not less than 45 grams per 100 grams.
  • Sucrose: not more than 5 grams per 100 grams for general honeys. Certain named floral sources are allowed not more than 10 grams per 100 grams, and lavender and borage not more than 15 grams per 100 grams.
  • Water-insoluble solids: not more than 0.1 grams per 100 grams for standard honey, and not more than 0.5 grams per 100 grams for pressed honey.

Then the Annex, which sets additional factors that are voluntary rather than essential, but which buyers use constantly.

  • Free acidity: not more than 50 milliequivalents of acid per 1,000 grams.
  • Diastase activity: not less than 8 Schade units in general, and not less than 3 Schade units for naturally low-enzyme honeys.
  • HMF, hydroxymethylfurfural: not more than 40 milligrams per kilogram as the standard limit, and not more than 80 milligrams per kilogram for honeys of declared tropical origin.

That last line is the single most important Codex line for an African beekeeper, so read it twice.

HMF rises with heat and with storage time. Codex explicitly recognises that honey from hot climates carries more HMF and permits double the limit, 80 mg per kg instead of 40, but only for honeys of declared tropical origin. Two consequences follow, and both matter commercially.

First, African honey is not automatically failing on HMF. The standard accommodates it. Beekeepers who have been told their honey cannot meet international standards because of the climate have been told something that is not true.

Second, that accommodation is not a licence to overheat honey. 80 mg per kg is a ceiling, not a target. A buyer paying a premium may specify tighter, and many do. Declaring tropical origin is what unlocks the higher limit, so know how your honey is described on its paperwork.

Now the part that turns these numbers into a diagnostic tool. Teach yourself what each failure means, or they are just numbers on a certificate.

  • Moisture above 20 percent means you harvested uncapped comb, or the honey absorbed water after harvest. It will ferment. This is the most common African failure.
  • Fructose plus glucose below 60 means it is not honey. It has been diluted or adulterated.
  • Sucrose above 5 means one of three things: sugar-fed bees whose syrup ended up in the crop, direct adulteration with cane sugar, or genuinely early-harvested unripe honey the bees had not yet inverted.
  • Water-insoluble solids above 0.1 means poor straining. Wax, bee parts, pollen clumps, grit and ash. This is the crude honey failure and it is entirely fixable by filtration.
  • Free acidity above 50 means fermentation has occurred. Yeasts have converted sugars to acid.
  • Diastase below 8 means the enzymes were destroyed. The honey was overheated, or it is very old.
  • HMF above 40, or above 80 for declared tropical honey, means overheated or stored too long and too warm.

Memorise two pairings and you can diagnose almost any rejection.

Low diastase plus high HMF equals heat damage. High moisture plus high free acidity equals fermentation. Two pairs of numbers, two distinct failures, two distinct fixes. Heat damage is fixed by never heating honey over a flame and never above the temperature you need to make it flow. Fermentation is fixed at the hive, by harvesting only capped comb.

Three honest gaps. Codex electrical conductivity criteria were not available for this course, and a figure that circulates in summaries must not be quoted. The Codex treatment of baker's honey, meaning honey for industrial use with permitted higher moisture and HMF and mandatory labelling, could not be confirmed from the text available. Obtain the current full CXS 12-1981 yourself; it is a public document.

And the final qualification, which governs everything above. Codex is a model, not law, until a country adopts it. Your national honey standard may differ, and it is the one that applies to you. Obtain it from your national standards body.

Crystallisation and Storage

Sooner or later a customer will bring back a jar of your honey, point at the pale grainy solid inside it, and tell you that you sold them sugar. What you say next decides whether you keep that customer and whether you keep your margin.

Crystallisation is not a defect. It is glucose coming out of solution. Honey is a supersaturated sugar solution, holding more sugar than it can permanently keep dissolved, so over time the glucose comes out as crystals. It is normal, it happens to genuine honey, and it happens faster in honeys with a high ratio of glucose to fructose.

Here is the sentence worth teaching your customers: liquid honey that never crystallises should raise suspicion, not confidence. A customer who thinks crystallisation means sugar adulteration is a training problem, not a processing problem.

What controls it? The glucose to fructose ratio and the glucose to water ratio. But the specific ratio thresholds that predict granulation were not available for this course and no number will be given here. Likewise, the temperature of fastest crystallisation is commonly quoted as around 14 degrees Celsius and the temperature that keeps honey liquid as above about 25 degrees, but neither figure was confirmed for this course and you should not repeat them as fact.

What you can do is observe. Different honeys from your own forage will set at different speeds. Record which of your batches sets fast and which stays liquid, and after two seasons you will know your own crop better than any table could tell you.

Now reversing it, and the trap in doing so. Gentle warming re-dissolves the crystals and returns the honey to liquid. The hazard is HMF formation and diastase loss. Every warming cycle costs quality, permanently. A honey that has been melted three times is not the honey you harvested.

And this course cannot give you a safe liquefaction temperature and time, because no sourced protocol was available. Do not borrow a number from beeswax. Beeswax melts at 64.5 degrees, and that is a wax figure that has nothing to do with honey handling and must never be used as one. If you do warm honey, warm it in a water bath, as gently and as briefly as you can, and understand you are spending quality to do it.

Which brings you to the commercial answer, and it is a good one. Do not fight crystallisation. Sell it.

Market crystallised honey as what it is: set honey, or creamed honey, at a premium. Set honey spreads on bread without running off. It does not leak in a bag. It looks and feels like a deliberate product rather than a fault. In many markets it sells for more than liquid honey, and it costs you nothing but the label and the explanation.

That gives you three products from one crop: liquid honey, set honey, and cut comb. Same bees, same harvest, three prices.

Now storage, which is where honey quietly loses value between your harvest and your sale.

Airtight, always. Honey is hygroscopic, meaning it pulls moisture out of humid air. Honey packed at exactly the Codex ceiling of 20 percent moisture and stored in an open bucket in a humid coastal store will be over the limit within weeks. This is why the Kenyan working target of less than 19 percent matters: it gives you margin for what happens after you seal the jar. Once fermentation starts, free acidity rises and the honey fails on that parameter too.

Cool and dark. HMF rises with storage temperature and with time. The rate was not available for this course, but the direction is certain. A drum of honey standing in the sun on a tin-roofed veranda is losing value every day, invisibly, and the loss will only appear when a buyer tests it.

Opaque containers protect against light and colour darkening. Food-grade only. Stainless steel, food-grade plastic or glass. Never galvanised, uncoated iron or copper, because honey's natural acidity dissolves metal into it.

And label every container with the harvest date the moment you fill it. HMF is partly a function of time, so a buyer testing a two-year-old drum is testing something different from what you harvested. Knowing which drum is oldest tells you which to sell first, and first in first out is worth real money in a hot climate.

One last note for a cooperative or a group store. Different members' honey will crystallise at different rates because it comes from different forage. Do not treat a fast-setting batch as a lower grade. It may be the best honey in the room.

Packaging and Labelling

A jar is not just something to put honey in. It is your entire sales argument in the customer's hand, and it is also the point where a national regulator has something to say about you for the first time.

Start with the container itself, because quality comes before appearance.

Every container that touches honey must be food-grade, and the honey rules from Lesson 2 all apply here. Airtight, because honey absorbs moisture from humid air. Opaque or at least stored dark and cool, because heat and light drive HMF and darken colour. Glass, food-grade plastic or stainless steel only. Never galvanised, uncoated iron or copper, because honey's natural acidity dissolves metal into it. And never a container that has held fuel, pesticide, paint or soap, no matter how thoroughly it has been washed. That single mistake is the commonest honey contamination event in smallholder systems and it cannot be undone.

Now match the container to the buyer, because you learned in Module 1 that you have several kinds.

  • Farm gate and neighbours often bring their own container. Fine, if it is clean and food-grade, and check it. Have some jars available anyway, because a customer who brings a jar buys once and a customer who buys a jar can be sold to again.
  • Shops and kiosks need a sealed, labelled container of consistent size that they can shelve and mark up. Consistency matters more than beauty here. A shop cannot price a product whose jars are all different.
  • Hotels and restaurants often want bulk, and they will ask for an invoice and sometimes for a licence.
  • Traders and bulking centres take drums or large buckets. Food-grade, sealed, and labelled with your name, the weight and the harvest date, so your batch stays traceable to you. That traceability is what lets a cooperative reward good members and identify bad ones.
  • Cut comb needs a rigid box with a tight lid, because comb crushed in transit becomes a leaking mess.

Get the fill weight right. Weigh a filled jar and an empty jar of the same kind, subtract, and you have the true net weight. Honey is sold by weight, not by volume, and a jar that holds 500 millilitres does not contain 500 grams of honey, because honey is denser than water. If your label says a weight, that weight must be there. Under-filling is fraud and over-filling is you giving away your crop, so weigh a sample from every batch.

Now labelling, and this is where the regulator arrives.

Labelling requirements are set nationally. Typical items a national standard will require include net weight, country of origin, a batch or lot number, and a best-before or expiry date, and there are usually rules about the name of the product itself and about the producer's name and address. But which of those apply to you, in what wording, and in what size of type, is decided by your national standards body and your national food safety authority. This course names no rule as if it were yours. Obtain the requirements and write your label to match them.

The same is true of premises. Registration of a room used to process food for sale is a national requirement in many countries, and so is food-handler health certification. Ask before you build a honey house, not after.

Three things to keep off your label.

First, health and medicinal claims. Medicinal claims on any hive product are controlled by national medicines and food authorities. You may sell honey and you may sell propolis. You may not lawfully claim they cure disease. This is a common route to prosecution and to losing a market, and it is entirely avoidable.

Second, floral origin claims you cannot support. Calling a honey acacia honey or coffee blossom honey when you do not know the actual floral composition invites a challenge you cannot answer. If you genuinely harvest during a single dominant flow and you have your flowering calendar from Module 6 to back you up, that is different, and it is a real premium worth chasing.

Third, organic or fair trade wording unless you actually hold that certification. Those schemes are audited. Using their language without the certificate is misrepresentation.

One legitimate claim worth understanding: declared tropical origin. The Codex HMF allowance of 80 milligrams per kilogram instead of 40 applies to honeys of declared tropical origin. Declaring where your honey comes from is not a marketing flourish; it is what unlocks the higher HMF limit on your specification. Make sure the origin is on your paperwork as well as your jar.

Finally, put the harvest date on every container even where the law does not demand it. It costs nothing, it lets you sell oldest first, and it tells an honest buyer you know what you are doing.

Grading and Pricing Your Honey

Most small beekeepers sell one honey at one price. That is almost always leaving money on the table, because one harvest rarely produces one quality of product.

Grading means sorting your crop before you sell it. Do it on measurable things, not on opinion.

The characteristics that actually separate grades:

  • Moisture. Measured with a refractometer. Honey under 19 percent is your top grade and your keeping grade. Honey near or over 20 percent needs to be sold quickly and locally and should never go into a drum for storage.
  • Clarity. Strained and settled to Codex water-insoluble solids of not more than 0.1 grams per 100 grams is one product. Crude honey with wax and debris in it is a different product with a different price, and you should know how much lower.
  • Colour. Light and dark honeys command different prices in different markets, and neither is universally better. Find out which your buyers prefer.
  • Presence of brood or pollen. Any honey with brood in it is a low grade, always. Dead larvae mean protein and moisture and faster fermentation.
  • Form. Liquid, set and cut comb are three products, not one, as you saw in Lesson 4.
  • Single flow versus mixed. If your flowering calendar tells you a batch came from one dominant source, that batch may be a premium product.

Sort at harvest, not at sale. Keep the bars of clean capped light comb separate from the darker, partly uncapped ones as you cut them. Once they are in the same bucket you have made your whole crop into your lowest grade.

Now pricing, and here is the honest position that governs this entire lesson. No African honey market analysis, price series, grading system or export requirement was available for this course. Nobody can tell you from a book what your honey is worth. What this course can do is give you the method.

The method has three inputs and they must all be your own numbers.

Input one: your break-even price per kilogram, from Module 1. Annual ownership cost plus variable cost, divided by kilograms produced. If you have not done that calculation, you cannot price honey, you can only guess and hope.

Input two: three real local quotations, obtained this month. Go to three different kinds of buyer and ask what they pay per kilogram, in what container, at what quality. Write down the name, the price and the date. A price you were told last year is not data.

Input three: your grade. Your best strained honey under 19 percent in a labelled jar is not the same product as a bucket of crude honey, and it must not be sold at the same price.

Then the decision. Compare your break-even price with the prices you can actually get. If your break-even exceeds every price on offer, your plan does not work at your current cost and yield, and you must change one of them. Break-even prices may genuinely exceed what buyers are willing to pay. Discovering that on paper before you borrow money is the most valuable thing this course can do for you.

Where does extra margin come from? Four places, and none of them is a bigger apiary.

First, quality. Moving a crop from crude honey to clean strained honey under 19 percent is the largest single value gain available in African beekeeping. It costs discipline and access to a refractometer.

Second, form. Cut comb and set honey often earn more per kilogram than liquid honey and need less equipment, not more.

Third, selling further down the chain. A trader buying crude honey in bulk pays the lowest price of anyone, because they take the transport and market risk. Every step you take toward the final customer is margin you keep, if you can carry the risk and the paperwork.

Fourth, and most under-exploited, the premium schemes. Whether organic, fair trade or forest honey certification is accessible to you and what it is worth was not available for this course, and that is a genuine gap. But note what those schemes reward: low-input, tree-based, chemical-free beekeeping in natural forage. That is exactly what most African smallholders already do. You may already meet the substance of a standard you have never heard of. Find out who certifies in your country and what it costs.

One warning for groups. A cooperative selling a bulked consignment is only as good as its worst member. One member who adulterates, or who feeds sugar during the flow and pushes sucrose above the Codex limit of 5 grams per 100 grams, fails the whole group's consignment. Adulteration is a governance problem before it is a chemistry problem. A group that grades and tests members' honey on the way in protects everybody's price.

Last, keep the records. Every batch: weight, grade, moisture reading, buyer, price and date. Three seasons of that is a price history nobody can argue with, and it is what turns you from a seller who accepts an offer into a seller who knows what the offer is worth.

1. Which extraction method needs no equipment beyond a clean knife and a clean container?

Cut comb suits any hive type, needs no extractor, strainer, tank or heat, and often earns the highest price per kilogram. It is badly underused in Africa.

2. Why is comb destruction not really a disadvantage of crush and strain?

A frame hive returns about 75:1 because the comb goes back intact. Crushing is what releases the second crop, though it does cost the colony roughly 8 kg of honey per kg of wax rebuilt.

3. What does a frame hive system without an extractor give you?

The extractor is the dividing line. You paid about three times as much for the hive and still end up crushing comb, which is the worst combination available.

4. What counts as genuine access to an extractor?

A promise that someone will buy one next year is not access. Decide this before you buy frame hives, because afterwards the money is already spent.

5. Why must harvested comb be processed promptly?

There are no bees policing a bucket of crushed comb in a store. Process the same day where you can, and keep everything covered because honey absorbs moisture from humid air.

6. What is the measurable target that straining exists to meet?

No sourced mesh specification exists, so the honest standard is the outcome. Water-insoluble solids means wax, bee parts, pollen clumps, grit and ash, and it is the crude honey failure.

7. Why must honey never be stored in galvanised or copper containers?

That acidity is normal and permitted, but it attacks metal. Stainless steel, food-grade plastic or glass only, and never a container that held fuel, pesticide, paint or soap.

8. How should you find out your settling time?

Settling time is temperature and viscosity dependent and no sourced figure was available. Your own observed figure is reliable and will not change much between batches.

9. Where should honey be drawn off a settling container?

Fine wax and air bubbles rise, so the clear honey is at the bottom. A tap fitted low on a food-grade drum is the cheapest upgrade a small honey house can make.

10. In a humid climate, should you store honey in the coolest room or the driest room?

A cool damp store puts moisture back into honey you worked to keep dry, pushing it toward fermentation. Dry beats cool, and airtight containers matter more than either.

11. What is the Codex HMF limit for honeys of declared tropical origin?

Codex allows 80 mg/kg for declared tropical honey against the 40 mg/kg standard limit, because it recognises that hot climates raise HMF. African honey is not automatically failing.

12. A honey tests at 6 g sucrose per 100 g. Which of these could NOT be the cause?

Overheating shows as low diastase and high HMF, not high sucrose. The sucrose limit of 5 g per 100 g is policing sugar feeding, adulteration and premature harvest.

13. Which pair of results indicates heat damage?

Enzymes are destroyed by heat and HMF is formed by heat, so they move together. High moisture with high free acidity is the fermentation signature instead.

14. What is the Codex minimum for fructose plus glucose in general honeys?

Not less than 60 g per 100 g for general honeys, with 45 g per 100 g allowed for honeydew honey and blends. Below the limit means the honey has been diluted or adulterated.

15. Which standard legally applies to honey you sell?

Codex is a model standard and is not law until a country adopts it. Your national standard may differ from the Codex figures, and it is the one that binds you.

16. A customer says crystallised honey proves you added sugar. What is the correct answer?

It is a training problem, not a processing problem. Genuine honey sets, and the commercial answer is to sell it as set or creamed honey at a premium rather than to fight it.

17. What does every warming cycle cost you?

Both are Codex-measured parameters and neither recovers. A honey melted three times is not the honey you harvested, which is why selling it set is usually the better business.

18. Why should you never use the beeswax melting point when warming honey?

No sourced safe liquefaction protocol for honey was available for this course. Borrowing a wax number would be inventing a honey number, so warm gently in a water bath and briefly.

19. Why is the Kenyan working target of under 19 percent moisture better than packing at the Codex ceiling of 20?

Honey packed at exactly the ceiling and stored in an open bucket in a humid store is over the limit within weeks, and fermentation then raises free acidity so it fails twice.

20. Why label every container with its harvest date?

HMF rises with storage time and temperature. Knowing which drum is oldest lets you sell first in first out, which is worth real money in a hot climate.

21. A trader offers you free drums that previously held diesel. What should you do?

A container that held fuel, pesticide, paint or soap is permanently unfit for honey. This is the commonest honey contamination event in smallholder systems and it is not recoverable.

22. Why does a 500 ml jar not hold 500 g of honey?

Honey is sold by weight, so you must weigh a filled jar and an empty jar and subtract. Under-filling against a stated weight is fraud; over-filling is giving away your crop.

23. Which claim may a beekeeper NOT lawfully put on a honey label?

Medicinal claims on hive products are controlled by national medicines and food authorities. Selling the product is normally fine; claiming a cure is a route to prosecution and lost markets.

24. Where do your honey labelling requirements come from?

Net weight, origin, batch and best-before are typical items, but the actual list, wording and type size are national. Ask before you print, not after.

25. Why does declaring tropical origin matter commercially?

Module 11 capstone

Take one batch of honey from comb to a labelled, priced jar and document every step. Step 1: harvest only capped comb, weigh it, and record the weight before you do anything else. Step 2: choose your extraction method and record why you chose it, then process the batch and weigh the honey and the wet wax separately. Step 3: strain the honey through the finest cloth you have, settle it covered and undisturbed for as long as it takes for the scum to rise, and skim. Step 4: measure the moisture with a refractometer, your own or a borrowed or cooperative one, and write the reading down. If you cannot get a refractometer, write down what it would cost and who has one. Step 5: fill your containers, weigh one filled jar and one empty jar, and calculate the true net weight. Step 6: obtain your national honey standard and your national labelling requirements from your standards body, and write a label that carries every item they require. Step 7: divide the batch into grades if it deserves grading, price each grade against three real local buyers' current prices, and calculate what the whole batch is worth. Step 8: compare that total with the break-even price per kilogram you calculated in Module 1 and write one paragraph saying whether this batch made you money.
