Drying turns a crop that spoils in days into one that keeps for months and reaches markets fresh mushrooms cannot. This module covers why to dry, the sourced two-stage drying method, how to test and store dried product, and what a label must carry and who decides that. It ends with the most serious material in the whole course: wild mushroom poisoning, why no folk test works, and the single commercial rule that keeps you and your customers alive.

Why Dry, and What Drying Is Worth

Fresh mushroom production is the core business this course is built around, but it is not the only one. Dried and value-added product is a second, real business model, and it exists because of one structural fact: drying converts a highly perishable crop into a shelf-stable one.

Think about what that actually changes. A fresh mushroom must find a buyer within your fresh window, which without good cooling can be measured in hours. A properly dried mushroom is not in that race at all. It can be transported further, held out of season, and sold to a completely different kind of customer - a household or a hotel buying dried mushroom for stews and sauces rather than fresh mushroom for a salad or a grill.

That is three separate commercial doors that fresh product cannot open.

  1. Distance. You are no longer limited to markets you can reach before the crop deteriorates. A dried product survives a journey that would destroy fresh product, which puts city buyers within reach of a rural grower who has no refrigerated vehicle.
  2. Time. Your production is lumpy - front-loaded flushes with gaps between batches. Dried stock lets you supply a buyer in the weeks when you have nothing fresh, which is exactly what turns an occasional supplier into a regular one.
  3. A different customer. Dried mushroom is a different product used for different cooking. It is not simply fresh mushroom that has been rescued.

Now the honest part, because it changes how you should plan. No African-specific price premium for dried versus fresh mushroom was retrieved for this course. There is no figure here telling you that dried sells for two times or five times the fresh price. If you meet such a number, treat it as unverified until you have checked it yourself in your own market.

What you should do instead is find out. Go to the shops, stalls and wholesalers that sell dried foods in your area and record what dried mushroom actually costs, in what pack size, and whether anyone is selling it at all. Write the prices and the dates in your notebook. That, plus the fresh price you are already recording from your own sales, is the only comparison that means anything for your business.

And there is a piece of arithmetic you must do before comparing those two prices, because getting it wrong will make drying look far more profitable than it is. Fresh mushrooms are 85 to 95 percent water. Drying takes almost all of that out - the sourced target for finished dried product is around 10 percent moisture. So a large weight of fresh mushroom becomes a small weight of dried mushroom.

This means you must never compare a price per kilogram of dried product against a price per kilogram of fresh product as though they were the same thing. They are not. A kilogram of dried mushroom represents many kilograms of fresh mushroom, plus fuel or sun time, plus labour, plus packaging. The correct comparison is what a fixed quantity of your fresh harvest earns sold fresh, against what that same harvest earns after drying, minus the cost of drying it. That is the only comparison that answers the question.

What is your own fresh-to-dry ratio? This course cannot give it to you, because it depends on your species, your growing conditions and how completely you dry. But you can measure it in one afternoon: weigh a fresh batch, dry it properly, weigh it again, and write both numbers down. That is step one and step five of this module's capstone, and once you have that ratio you can do the comparison above with real figures.

So when is drying a business and when is it only salvage?

It is salvage when you dry what you failed to sell fresh. There is nothing wrong with that - it beats a loss - but it is a response to a scheduling problem, not a strategy, and it should also make you look at why the product went unsold.

It is a business when you decide in advance that a defined part of your production is going to be dried, priced and sold as dried product to a buyer you have already identified. That decision changes what you do at harvest, because product intended for drying should be handled and prepared for drying promptly rather than sitting around while you try to sell it fresh first.

One word of caution before the next lesson. Drying is not a way to rescue product that has already begun to spoil. Drying stops deterioration; it does not reverse it, and it does not make contaminated product safe. Mushrooms that are slimy, blotched, mouldy or smelling wrong must be discarded, not dried. What comes out of a dryer is exactly what went in, only drier.

The Two-Stage Drying Method

Drying looks like the simplest thing in this course - put mushrooms somewhere hot until they are dry. It is not, and the reason is a specific failure called case-hardening. Understanding that failure is what makes the sourced method make sense.

Case-hardening is what happens when you dry too hot too fast. The outside of the mushroom dries and hardens into a tough layer while the inside is still moist. That hard outer layer then blocks the remaining moisture from getting out. You end up with a product that looks dry, feels dry, and is not dry - and moist material sealed inside a dry shell in a storage container is exactly how a batch of dried mushrooms goes mouldy weeks later.

The method that prevents it is two-stage: gentle first, hotter afterwards. Dry slowly enough at the start that moisture can migrate out of the interior as fast as the surface loses it, then raise the temperature to drive off what remains.

Here are the sourced figures, from the MushWorld handbook, for sun and solar and low-heat drying.

Stage one, the initial drying stage. About 35 degrees C in sunny conditions, or 30 degrees C in damp or overcast conditions. Held for five hours in sunny conditions, or seven hours in rainy conditions. Notice how the source adjusts both the temperature and the time for the weather: damp air carries moisture away more slowly, so a wet day needs a lower start and a longer hold, not a hotter fire to compensate.

Stage two, the final drying stage. Raise to 40 to 60 degrees C and hold for 12 to 18 hours, bringing the product to a final moisture content of around 10 percent.

Now the caveat, which you must carry with those numbers. This is an Asian development-sector handbook figure, not an African-measured drying protocol. No African-specific solar-dryer trial or moisture-content verification study for oyster mushroom was retrieved for this course. So treat those temperatures and hours as one documented method that works, not as the only correct one, and certainly not as a protocol validated under your conditions.

What is safe to teach without any reservation is the structural principle: dry gently at first to avoid case-hardening, then finish at a higher temperature to drive off the remaining water. That principle holds regardless of what dryer you build.

And this is why the last line of the sourced guidance matters most of all. A learner building a solar dryer locally should verify that their own dried product is actually dry - brittle, snapping rather than bending - rather than trusting a clock alone. Your dryer is not the dryer the handbook was written about. Your air is not that air. The clock is a guide; the product is the evidence.

Some practical points for the preparation itself, which the figures above assume.

  • Cut to an even thickness. Thick and thin pieces in the same load dry at different rates, so either your thin pieces overdry or your thick pieces come out still moist inside. Even pieces are the same principle you learned for substrate: even material treats evenly.
  • Load in a single layer with air able to move around each piece. Piled mushrooms dry on the outside of the pile and steam on the inside.
  • Start with clean product. Drying does not sterilise. Anything on the mushroom when it goes in is on the mushroom when it comes out, concentrated into less material.
  • Keep the dryer covered against dust, insects and rain. An open drying rack in a farmyard collects everything the air is carrying.
  • Dry promptly after harvest. Mushrooms held warm for hours before drying are already deteriorating, and drying will preserve them in exactly the state they had reached.

One note on sun-drying directly in the open. It is the cheapest method available and it is genuinely used, but the temperature is not under your control and neither is the weather that day. A simple covered solar dryer - a shaded, ventilated box or frame that lets air move through while keeping rain, dust and insects out - gives you far more control over the two stages than a mat in the yard, and it is buildable from local materials.

Finally, record what you did. Date, weather, roughly what temperature if you have any gauge, how many hours at each stage, and how the product came out. Because the sourced protocol is from elsewhere and your own conditions are not documented anywhere, your own drying log is the only route to a repeatable result. After a few batches you will have a method that is genuinely yours and genuinely works, which is more valuable than a number from a handbook written for a different continent.

Storing Dried Product Without Losing It

A batch of properly dried mushrooms is a stored asset. It is also the easiest asset in this course to lose quietly, because it fails slowly and invisibly, and by the time you notice, the whole container is gone.

The rule is short. Dried product must be stored in a sealed, moisture-proof container.

The reason is the reverse of drying. Dried mushroom at around 10 percent moisture is far drier than the air around it in most African climates for most of the year. Dry material in humid air does not stay dry - it pulls moisture back out of the air until it reaches a balance with its surroundings. A dried mushroom that reabsorbs ambient humidity is at renewed risk of mould growth, and for a food product that is both a spoilage problem and a potential health hazard.

Read that last part carefully, because growers tend to file mould in stored food under waste rather than under danger. Mould on a stored food product is a health hazard, not only a loss of stock. You cannot make it safe by picking out the visibly affected pieces, and you must never sell from a container that has gone mouldy, in exactly the same way and for exactly the same reason that you must never sell a fresh batch showing contamination mixed with clean product.

So what does a genuinely moisture-proof container look like in practice? The test is simple: would it hold water without leaking, and does it seal tight when closed? A screw-top jar with an intact seal. A food-grade bucket with a lid that clamps. A thick, well-sealed plastic bag inside a rigid container. What does not qualify: a bag folded over, a tin with a loose lid, a sack, a container that was cracked or that smells of what it held last.

Beyond sealing, three storage conditions help, and none of them cost anything.

  • Cool. Heat speeds up every deterioration process, in dried food as in fresh.
  • Dark. Light degrades colour and quality over months of storage.
  • Off the ground and away from walls that sweat, so that a container is not sitting in the one damp spot in the store.

Now the discipline that turns a container into managed stock, which is inspection on a schedule.

Dried product fails slowly. It softens before it moulds. If you open a container at planned intervals and check, you will catch a batch that has begun to soften while it is still saleable and can be re-dried. If you open it only when a customer wants some, you will discover the problem at the worst possible moment - in front of the buyer, with no time to react.

So set a schedule and write it down. Check at one week, one month and three months, which is what this module's capstone asks you to do. At each check, look for three things: is it still brittle and snapping rather than bending; is there any smell that was not there before; is there any visible mould, discolouration or clumping. Write the answer down with the date, even when the answer is that everything is fine. A record of nothing wrong is what tells you when something has changed.

Label every container the moment you seal it. Species, batch, and the drying date, at minimum. Without a date you cannot rotate stock, and without a batch reference you cannot trace a problem back to the harvest and drying record that caused it. Labelling for sale is a bigger subject with its own rules and its own authority, and it is the next lesson - but labelling for your own store is simply record keeping in a place where you will actually see it.

Rotate on the date. Sell or use the oldest stock first. This is obvious and it is the single most commonly broken rule in small food businesses, because the newest batch is on top and the oldest is at the back. Arrange your store so the oldest is the easiest to reach.

One final point about how much to hold. Dried stock is not free to keep. It is money you have already spent - substrate, spawn, labour, fuel - sitting in a container instead of in your hand. Holding some to supply a buyer between flushes is a genuine business advantage. Holding a large quantity because you have not found a buyer is a different situation, and the honest name for it is unsold stock. Track how long each batch sits before it sells, and let that figure tell you how much it is sensible to dry next time.

Labelling and What the Regulator Decides

The moment you put a package of food in front of a paying customer, you are in territory where the rules are written by your government, not by your buyer and not by this course. This lesson tells you the principle, tells you who to ask, and tells you what to build on your own side so that whatever the rules turn out to be, you can meet them.

Start with the position, plainly. What must appear on a food label is set by a national authority and differs by country. This course gives no list of mandatory label fields, no required wording, and no font size, because those differ between countries and a wrong instruction here would put you in breach of a rule you did not know existed while making you feel compliant.

The kind of authority you are looking for is a national food-safety authority, a bureau of standards, or the equivalent body that sets food labelling and packaged-food requirements in your country. In many countries a bureau of standards handles labelling and a separate food-safety or public health body handles food business registration. Your agricultural extension office will know the names, and so will any established food business in your town - a bakery or a packer selling packaged food locally has already been through this and can tell you who they dealt with.

The questions to ask are these, and asking them precisely gets you a precise answer.

  1. Do I need to register or license a food business to sell packaged dried food, and if so with whom?
  2. What information must appear on the label of a packaged food product?
  3. Are there rules specific to dried products or to mushrooms?
  4. Are there rules about where and how the product may be processed and packed?
  5. Are there requirements about record keeping or traceability that I must be able to show?

Write the answers down with the date you got them and the name of the person who gave them. Rules change, and having a dated record of what you were told is worth a great deal if a question ever arises.

Now the part that is entirely in your hands, and that you should build whatever the answers turn out to be: traceability.

Traceability means that if a customer comes back to you with a complaint about a specific package, you can find out which batch it came from, when it was grown, what substrate it grew on, what spawn produced it, when it was harvested, when it was dried, and where it was stored. That chain already exists in the records this course has been asking you to keep since module one - dry substrate weight and date, spawn source and batch, pasteurisation method, spawning date, harvest date and flush number, and now drying date and storage container.

What turns those records into traceability is one small step: a batch code that appears on the package and in your book. It does not have to be sophisticated. A date plus a number is enough - the drying date and a sequence number for the batch dried that day. Write it on the package and write it at the head of the record page. That is the whole system.

Why bother, when you are small? Three reasons.

First, a complaint you can trace is a problem you can fix, and a complaint you cannot trace is a problem you must guess at while worrying about the rest of your stock.

Second, a serious buyer will eventually ask. Supermarkets and hotel groups in particular ask suppliers questions about where product comes from, and a grower who can answer immediately looks like a business rather than a hobby.

Third, it protects you. If your batch was not the problem, your records are how you show it.

One last thing about honesty on a label, which is not a regulatory point but a commercial one. Whatever you write on a package must be true. This connects to something earlier in the course about nutrition claims: mushroom protein figures such as the 30 to 35 percent quoted for Pleurotus ostreatus are on a dry-weight basis, and quoting a dry-weight percentage to a customer as though it were a fresh-weight figure is a common and easily corrected error. Do not print a claim you cannot stand behind. A health-conscious buyer who checks a number and finds it overstated will not simply correct you - they will stop trusting everything else you told them.

Wild Mushrooms Can Kill You

In this lesson

This lesson is different from every other lesson in this course. It is not about growing better or earning more. It is about not killing anyone, including yourself. Read it in full, twice, and read it before you ever pick up a mushroom you did not grow.

Amatoxins are the toxin group responsible for the overwhelming majority of fatal mushroom poisonings worldwide. Approximately 95 percent of mushroom-poisoning deaths worldwide are attributed to amatoxin-containing species.

Where are they found? In species of Amanita - including Amanita phalloides, A. virosa, A. verna, A. ocreata, A. bisporigera and A. suballiacea - and in species of Lepiota, Galerina and Conocybe. All four of those genera have described African species. This is not somebody else's problem in somebody else's country.

Now the fact that destroys every piece of folk wisdom you have ever heard about telling a good mushroom from a bad one. Amatoxin-containing mushrooms are large, 5 to 15 centimetres, they have no distinctive taste or smell, and they are frequently visually indistinguishable in colour or general appearance from edible species.

The deadliest mushrooms in the world do not look dangerous. They do not smell dangerous. They do not taste dangerous. There is no bitterness, no foul smell, no lurid colour warning you.

So every traditional test you may have been taught is worthless, and specifically: testing by smell does not work, testing by taste does not work and can kill you, judging by colour does not work, and colour-change reactions with silver, with an onion, with a coin or with anything else are not validated in the clinical literature. This course teaches none of them as safe, because none of them are safe. A person who applies one of these tests and eats the mushroom has not tested anything. They have simply eaten an unidentified mushroom while feeling reassured.

Now the clinical course, and this is the part that turns a poisoning into a death. It is a trap, not a warning.

After eating an amatoxin-containing mushroom there are typically no symptoms at all for at least six hours. The person eats dinner, feels completely normal all evening, and goes to bed well.

Then gastrointestinal symptoms follow: nausea, cramping, diarrhoea. Unpleasant, but easy to blame on something else you ate.

And then comes the deadly part. Those symptoms are frequently followed by an apparent recovery lasting two to three days, during which the patient often feels better - while liver damage is actually progressing inside them the whole time. They feel like they are getting over a bad stomach. They are not. They are getting worse in a way they cannot feel.

Liver and kidney failure can then develop within three to seven days of eating the mushroom.

This explains exactly why people die of mushroom poisoning who could have been saved. They feel fine for the first several hours, so they do not connect the illness to the meal. Then they feel better after a day or two, so they decide it has passed. By the time they are ill enough to seek help, the poisoning is already severe.

So here is the rule that follows, and it is the most important practical instruction in this course. Anyone who has eaten an unidentified wild mushroom and later develops any gastrointestinal symptoms, however mild, and however much time has passed, needs medical attention immediately. Not once the symptoms seem serious. Not tomorrow if it has not cleared up. Immediately. Tell the medical staff what was eaten and when, and take a piece of the uneaten mushroom with you if any remains.

Do not wait for the person to look sick enough to justify the trip. The whole nature of this poisoning is that the person will not look sick enough, at the moment when treatment would help most.

One specific, documented confusion belongs here. Amanita phalloides is documented in the clinical literature as commonly mistaken for the paddy straw mushroom, Volvariella volvacea. Paddy straw mushroom is a real, edible, tropical species that people genuinely cultivate and eat. It has a deadly look-alike, and confident people have made that exact mistake and died of it. If a species with a real culinary tradition can be confused with one of the deadliest mushrooms on earth, no amount of family confidence about a mushroom makes it safe.

One honest note on the data. No African country-specific mushroom-poisoning incidence, hospital-admission or fatality data was retrieved for this course. Nobody in these sources has counted the cases. That absence does not weaken the warning by even a little: the biochemistry of amatoxin poisoning is not African, Asian or European. It is the same everywhere the relevant genera grow, and they grow in Africa.

The Only Safe Commercial Rule

The previous lesson told you what amatoxin poisoning does. This lesson tells you what to do about it as a person running a business that sells mushrooms to other people to eat.

The rule is one sentence. Sell only what you cultivated yourself, from named, spawn-propagated species.

That is the whole rule. It is not a preference or a matter of caution. It is the only rule that survives contact with the facts in the last lesson, and here is why.

You can be certain what a cultivated mushroom is. It came from spawn of a known species, which you or a supplier deliberately propagated. It grew on substrate you prepared, in a bag you filled, in a room you control. There was never a moment at which a different species could have entered the chain. Identification is not a judgement you are making about an object you found - it is a fact about a process you ran.

A wild mushroom offers none of that. Somebody looked at it and decided what it was, and you are betting your customer's liver on the quality of a stranger's judgement, made in a field, possibly in poor light, possibly in a hurry, possibly by someone who has been picking that mushroom for thirty years and has never once met the deadly look-alike that grows in the next valley.

This course teaches the cultivation of named, spawn-propagated species only. It does not teach, endorse or provide any identification guide for foraging unknown wild mushrooms for sale or consumption. That is a deliberate position, and now you know the reason for it.

So what do you do when someone offers to sell you wild-collected mushrooms to resell? You say no. Not because you doubt them personally, but because you cannot verify it and you would be passing that unverifiable risk on to a customer who has no way of knowing they are carrying it. Say that plainly. A serious person will respect it, and it is exactly the same discipline as refusing to sell a batch showing contamination.

And what do you do if a customer asks you to identify a wild mushroom they have picked? You decline, and you tell them why: the deadliest species look, smell and taste like ordinary mushrooms, no folk test works, and nobody should be identifying wild mushrooms except someone with genuine, verified expertise in the mushrooms of that specific region. The rule to teach is the rule itself, not a list of safe-looking features, because a list of safe-looking features is not a safe identification method.

Now, Termitomyces, because this is where the honest complication sits.

Termitomyces species - the termite mushrooms prized across much of Africa - are a genuine, high-value seasonal market product. People will pay well for them in season. They are also named in the consumer research behind this course as a species African consumers actively value, and the nutrition figures gathered include Termitomyces striatus at 7.5 milligrams of iron and 2.1 milligrams of zinc per 100 grams.

But Termitomyces cannot be cultivated. These species live in an obligate symbiosis with a fungus-farming termite colony, and that relationship has never been reliably reproduced in artificial cultivation. There is no spawn to buy and no method to teach. So this course teaches Termitomyces as a market fact - people buy it, in season, at good prices - and explicitly not as a species you can grow.

If you deal in Termitomyces at all, the position is narrow and specific. It should only be harvested by someone who already has reliable, experienced local identification knowledge of that specific, well-known species and its distinctive termite-mound habitat. That is a real thing that real people have. What it is not, under any circumstances, is a doorway. Knowing one recognisable mushroom and its unmistakable habitat is not an invitation to forage unfamiliar mushrooms generally on the strength of that one example. The moment you step from the mound to the general bush, everything in the previous lesson applies to you again in full.

And if you sell it, be honest about what you are selling and where it came from, so a buyer knows they are buying a wild-collected seasonal product rather than your cultivated crop.

One closing thought for a business owner. Everything else in this course is about improving a number - biological efficiency, shelf life, margin, contamination rate. This lesson is about a category of mistake that does not show up as a worse number. It shows up as a person in a hospital, and a business that ends. Keep the two apart in your head: cultivated product is your business, and wild mushrooms are somebody else's expertise. Sell only what you grew.

A fresh mushroom must find a buyer inside a very short window. A dried one is not in that race, which puts distant markets and out-of-season supply within reach.

The structural logic is teachable; the margin is not. Any premium figure you meet should be treated as unverified until you have checked it in your own market.

3. Why can you not compare price per kilogram dried against price per kilogram fresh?

Fresh mushroom is 85 to 95 percent water and dried product is around 10 percent moisture. The correct comparison is what one fixed harvest earns each way, minus drying costs.

4. When is drying a business rather than salvage?

6. What is case-hardening?

Moist material sealed inside a dry shell is exactly how a stored batch goes mouldy weeks later, which is why the first drying stage must be gentle.

7. What does the source do differently on a damp or overcast day?

Damp air carries moisture away more slowly, so a wet day needs a gentler and longer start, not a hotter fire that would case-harden the surface.

8. What is the sourced final drying stage?

It is a MushWorld handbook figure, not an African-measured protocol - no African solar-dryer trial was retrieved - so it is one documented method rather than the only correct one.

9. How should you verify that a batch is properly dried?

Your dryer and your air are not the ones the handbook describes. The source itself says to verify the product rather than trust a clock.

10. Why must pieces be cut to an even thickness?

It is the same principle as even substrate piece size: even material treats evenly. Uneven loads guarantee that part of the batch is wrong.

11. Why must dried mushrooms be stored in a sealed, moisture-proof container?

Dry material in humid air moves toward balance with its surroundings. Reabsorbed moisture puts the batch back at risk of mould growth.

12. A container of dried mushrooms has developed visible mould. What do you do?

It is the same rule as for a fresh batch showing contamination mixed with clean product: the customer cannot make the judgement, so you must make it for them.

13. Why inspect stored stock on a schedule rather than when a customer asks?

Opening a container only when a buyer wants some means discovering the problem in front of the buyer with no time to react.

14. What is the minimum you should write on a stored container?

Without a date you cannot rotate stock, and without a batch reference you cannot trace a problem back to the harvest and drying record behind it.

15. What does the amount of dried stock you hold actually represent?

Holding some to supply a buyer between flushes is a real advantage. Holding a lot because you have no buyer is unsold stock, and tracking how long batches sit tells you how much to dry next time.

16. Why does this course give no list of required label fields?

The course states the principle and names the kind of authority to ask - a national food-safety authority or bureau of standards - rather than inventing a rule.

17. What is the minimum system that gives you traceability?

A drying date plus a sequence number is enough. It links the package back through drying, harvest, spawning, spawn batch and substrate records you already keep.

18. Why does traceability protect you as well as the customer?

A complaint you can trace is a problem you can fix; one you cannot trace leaves you guessing while worrying about your remaining stock.

19. The 30 to 35 percent protein figure for Pleurotus ostreatus is measured on what basis?

Fresh mushroom is 85 to 95 percent water, so a 100 g fresh serving does not contain 30 to 35 g of protein. Quoting the dry-weight figure as a fresh-weight one is a common overclaim.

20. What should you record when you get answers from a regulator?

Rules change, and a dated record of what you were told and by whom is worth a great deal if a question is ever raised about your product.

21. What share of mushroom-poisoning deaths worldwide are attributed to amatoxin-containing species?

They are found in Amanita, Lepiota, Galerina and Conocybe species, all four of which have described African species. This is not a problem confined to other continents.

22. Which folk test reliably identifies a poisonous mushroom?

The deadliest species are large, have no distinctive taste or smell, and are frequently visually indistinguishable from edible ones. A person applying such a test has simply eaten an unidentified mushroom while feeling reassured.

23. How long after eating an amatoxin-containing mushroom do symptoms typically begin?

The delay is why people fail to connect the illness to the meal, and it is the first half of what makes this poisoning so lethal.

24. What happens two to three days after the first symptoms?

Liver and kidney failure can develop within three to seven days of ingestion. The false recovery is what persuades people not to seek help at the moment treatment would help most.

25. Someone ate an unidentified wild mushroom yesterday and has mild stomach upset today. What should happen?

The whole nature of this poisoning is that the person will not look sick enough at the point when treatment helps most. Take a piece of any uneaten mushroom with you.

26. What is the only safe commercial rule about what you sell?

Module 11 capstone

Build and prove one small drying and storage system, end to end, with a written record. Step 1: weigh a fresh sample of your own mushrooms and write the fresh weight down, along with the date and the weather. Step 2: prepare the sample for drying by slicing evenly, and write down the thickness you chose, because even piece size is what makes even drying possible. Step 3: dry the sample in whatever dryer you have access to, gentle first and hotter afterwards, and write down the temperature if you have a gauge and the number of hours at each stage. Step 4: test for dryness by hand: a properly dried piece snaps cleanly, it does not bend. Write down whether yours snapped or bent, and dry it further if it bent. Step 5: weigh the dried sample and write the dried weight down beside the fresh weight. Those two numbers together give you your own fresh-to-dry ratio, which no book can give you for your crop. Step 6: store the dried sample in the most genuinely airtight, moisture-proof container you can find, label it with the species, the batch and the drying date, and put it somewhere cool and dark. Step 7: open and inspect it at one week, one month and three months, and write down whether it is still brittle, whether it has softened, and whether there is any smell or visible mould. Step 8: write one page on what you would change about your dryer and your container before you dry anything for sale.
