Choosing Your Cow
The most expensive decision in smallholder dairy is which animal you buy, and it is usually made on somebody else's advice about somebody else's farm. A cow only gives milk because she had a calf, and she only has another calf if she gets back in calf. The gap between one calving and the next is the single number that decides whether a smallholder dairy cow pays for herself, and across 1,317 cow-owning households in western Kenya that gap averaged 670 days against a biological target of 365 to 425. Milk yield after calving is not a flat line, and a farmer who does not know the shape of the curve cannot tell a normal decline from a problem. Feeding The Dairy Cow
A lactating cow is not a beef animal that happens to give milk. Rearing The Calf

Housing the Dairy Cow

Milk Quality and Testing
Milk is bought and rejected on the basis of tests, and a farmer who does not understand those tests is at the mercy of whoever holds the equipment. This module teaches what milk is actually made of and why a zebu cow's milk can be worth more per litre than her yield suggests, then works through the four low-cost platform tests used at collection points everywhere - the lactometer, the alcohol test, the resazurin test and clot-on-boiling - including how to run each one and how to read it honestly. Keeping Milk Safe
Milk leaves the cow at body temperature, full of nutrients, in an ambient heat that can reach the forties.
